Everything good in one small bite. Yield: 48 mini cheesecake bites
3/4 cup graham cracker crumbs
2 tablespoons sugar
3 tablespoons butter, melted
1 and 1/2 cups whipped cream cheese
1 and 1/2 cups sour cream
2 eggs
1 cup sugar
3 tablespoons Glicks Flour
1 tablespoon Gefen Vanilla Sugar
whip, for garnish
Preheat oven to 350 degrees Fahrenheit. Grease 48 mini muffin cups.
Mix crumb ingredients until well combined.
Press into bottom of muffin cups and bake for four minutes.
Lower oven temperature to 230 degrees Fahrenheit.
Whisk cheese ingredients, adding one ingredient at a time, until just combined.
Spoon into muffin tins, filling to top.
Bake for one hour.
Allow to cool.
Garnish with whip and additional crumbs.
