Ingredients

Caramel

  • 2 tablespoons butter

  • 1/8 teaspoon salt

Turtles

  • 1 pound (2.2 kilograms) pecan halves

  • melted chocolate, for dipping

Directions

Make the Caramel

1.

Bring cream to a boil in a heavy saucepan. Stir in sugar and honey and return mixture to a boil. Simmer until mixture reaches 250 degrees Fahrenheit on a candy thermometer.

2.

Remove from heat and stir in vanilla extract, butter, and salt. Use for Caramel Turtles (below) or see other suggestions.

Notes:

To simply use this as caramel cream, melt until it reaches a spreading consistency. Then use as desired.

Yields 5 ounces

Make the Turtles

1.

Arrange pecans on Gefen Parchment Paper in groups of five for a head and four legs.

2.

Drizzle hot caramel over each “turtle,” forming a mound barely covering each pecan. Let cool several hours.

3.

When hardened, dip into melted chocolate and allow to harden again.

Variation:

For Toffees: Pour the caramel mixture into a greased pan or container and allow to cool. Cut into squares with a buttered knife. Keep refrigerated.

Yields one 8-inch (20-centimeter) pan of caramels

Mistake in the ingredient list! I just noticed that the ingredient list calls for 1 lb. or 2.2 kg of nuts. This is a mistake, because 1 kg = 2.2 lb. – NOT the other way around.
So in this case, 1 lb. would be 0.454 kg, or 454 g.
