Cereal is not usually considered a filling meal, but with the addition of the nuts here, all that changes. And if your kids like to subsist on cereal alone, this sweet and delicious homemade mix is the best way to get them to consume nuts too.
I’d say to store it in an airtight container to ensure they stay crispy, but I can almost guarantee they’ll be eaten straight off the sheet pan and you won’t have much left over to store.
7 cups cornflakes
7 ounces slivered almonds
2 cups pumpkin seeds
1/2 cup sugar
1/4 cup oil, such as Manischewitz Grapeseed Oil
3/4 cup Gefen Maple Syrup
1 ounce margarine
1/2 cup Gefen Dried Cranberries (optional)
Melt sugar and margarine over a small flame until melted (about one minute).
Once melted, immediately add the rest of the ingredients and mix to combine.
Pour the mixture onto a Gefen Parchment-lined cookie sheet and spread into an even layer.
Bake at 350 degrees Fahrenheit for 25 minutes or until the mixture is slightly sticky and no longer wet.
