Granola is a great addition to yogurt, but also a great grab-and-go snack. I prefer nice big clusters so you can easily take a handful without dropping crumbs everywhere. I created this recipe to make the perfect granola clusters and snuck in some more fiber from the flaxseed. Your kids won’t even notice!
3 cups rolled oats (gluten free if needed)
1 cup chopped peanuts (feel free to use any other nuts like pecans or almonds)
1 cup oat flour
1/2 cup ground flaxseed
1/2 teaspoon salt, if nuts are unsalted
1/2 cup Gefen Natural Peanut Butter (or other nut butter of choice)
1/2 cup Gefen Honey (add a little more if you prefer a sweeter granola)
1 tablespoon Gefen Vanilla Extract
1/2 cup miniature dark chocolate chips (optional)
Preheat oven to 325 degrees Fahrenheit.
Combine oats, peanuts, flour, flaxseed, and salt in a large bowl. In a small bowl, mix nut butter, honey and vanilla.
Pour into dry ingredients and mix well. Spread on a baking sheet lined with parchment paper, keeping the granola in one layer.
Bake for 30 minutes or until the top starts to brown. Remove from the oven and lift the sides of the parchment to break into clusters. Bake for another 15 minutes if some spots are still soft.
Remove from oven and quickly sprinkle with the chocolate chips, if using. Allow to cool fully. The granola will harden as it cools.
