This Chicken Marbella-inspired dish is incredibly juicy, tender, and full of flavor and sweetness from the wine, honey, olives, capers, zaatar, and lemon juice.
16 boneless, skinless thighs (pargiot)
8 to 10 cloves garlic, peeled and minced
1/2 cup Tuscanini White Cooking Wine
1/4 cup Tuscanini Extra-Virgin Olive Oil
1 and 1/2 tablespoons zaatar
lots of freshly ground pepper
1 teaspoon kosher salt
juice of 1/2 a lemon
2 tablespoons Gefen Honey
1/2 cup sliced olives
2 tablespoons capers
Preheat oven to 325 degrees Fahrenheit.
Place chicken in an oven-safe baking dish.
In a small bowl, combine garlic, wine, oil, zaatar, pepper, salt, and lemon juice. Pour over chicken.
Add olives and capers to the pan. Drizzle with honey.
Cook for 30 minutes covered, baste, and cook for an additional 30 minutes uncovered.
