1 eggplant, sliced into half circles
1/2 teaspoon salt
3 tablespoons oil
2 tablespoons sugar
2 tablespoons vinegar
1 jalapeƱo pepper, sliced thinly
3 cloves garlic, such as Mr. Dipz Peeled Garlic, sliced thinly
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Place eggplant slices in a single layer on baking sheet. Sprinkle with salt and drizzle with oil.
Bake for 25 minutes or until edges are brown.
In a small bowl or cup, whisk together sugar and vinegar.
Place eggplant, pepper, and garlic in a container. Pour liquid mixture over and lightly shake the container for even coating.
Allow to marinate for at least 30 minutes.
