This winner dinner of grilled chicken marinated in an herby, lemony jalapeño sauce will become a family favorite.
2 jalapeño peppers, deseeded (remove membranes too if you don’t like it spicy)
6 tablespoons lemon juice
2 and 1/4 teaspoons dried oregano
5 tablespoons oil
6 cloves garlic
1 and 1/2 teaspoons salt
1/4 teaspoon black pepper
1 and 1/2 pounds chicken cutlets
Place jalapeño peppers, lemon juice, oregano, oil, garlic, salt, and pepper in a food processor. Pulse until finely chopped.
Place chicken in a bowl with the blended marinade. Toss well and let marinate for two hours or overnight.
Grill chicken for three to four minutes on each side for thin cutlets or six to eight minutes on each side for thick cutlets.
