Diets Prepare yourself for a symphony of flavors that will dance on your taste buds! This salad is a true masterpiece, combining nutritious kale, juicy pears, earthy roasted beets, and creamy goat cheese. Each ingredient is carefully chosen to create a harmonious balance of taste and texture.
1 bunch curly kale
5 to 6 small roasted beets (red and/or golden), cut into thin slices
1 green Anjou pear, cut into thin ribbons with peeler
1/2 cup walnuts
4 ounces goat cheese, cut into round slices
1/3 red onion, sliced
2/3 cup Glicks Ketchup
1/2 cup Tuscanini Light Olive Oil
1/2 cup Gefen Vinegar
2 teaspoons salt
1/2 cup sugar
1/2 teaspoon chili powder
1/2 teaspoon dried mustard
1/2 teaspoon onion powder
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
Tear kale leaves from the stems and chop leaves into small pieces (save the stems for juicing).
Place torn kale into a large bowl and massage with your hands for two to three minutes. This helps break down the fibers and soften the kale. You can also put a drop of oil on your hands to moisten the kale. You will notice that the kale will become bright green.
Move massaged kale to a platter and top with roasted beets, ribboned pear, walnuts, goat cheese and red onion.
To make dressing, mix all ingredients until smooth. Drizzle over salad.
