Kofta Kebab Sheet-Pan Dinner

Ingredients

Kebabs

  • 1 slice white bread, crust removed

  • 1 tablespoon water

  • 1 onion, halved

  • 1 pound (1/2 kilo) ground beef, lamb, or a mixture of both

  • 2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic

  • 1 tablespoon chopped parsley

  • 1 tablespoon baharat seasoning

  • 1 teaspoon salt

  • 1/8 teaspoon turmeric

  • 1/8 teaspoon chili powder

  • 18 short wooden skewers

Also On The Sheet Pan

  • 1 large tomato or 1 vine of cherry tomatoes

  • chopped parsley

  • techinah

Directions

Prepare the Kebabs

1.

Preheat oven to 390 degrees Fahrenheit (200 degrees Celsius).

Tear up the bread into a large bowl and add the water. Toss together. Grate half of the onion into the bowl (reserve the second half for step 7).

Add the meat, garlic, parsley, baharat, salt, turmeric, and chili powder. Mix well to evenly distribute the spices.

Shape the mixture into 18 oval shapes, about two and a haf inches long, and insert a skewer through the center of each one, pressing the meat to the skewer.

Spray a sheet pan with cooking oil and arrange the skewers on it, leaving space between them so the sides crisp up.

6.

Add the French fries around the edges of the pan and spray them with cooking oil. Sprinkle with salt.

7.

Cut the second half of the onion and the tomato (if using) into wedges. If using cherry tomatoes, leave them whole. Add them around the kebabs.

8.

Prepare the sauce: In a small bowl, mix together the lemon juice, water, tomato paste, oil, and sugar. (Optional: I like to peel some of the lemon rind or cut extra lemon wedges and add them next to the kebabs.) Pour the sauce over the kebabs and vegetables.

Bake for 20 minutes. Flip the French fries and any onions that are getting browned. Do not flip the kebabs! Return the pan to the oven and bake for another 10–15 minutes.

10.

Sprinkle with chopped parsley and serve with techinah.

Notes:

To freeze, place the uncooked skewered kebabs in a large zip-top bag, leaving space between them. Press as much air as possible out of the bag and freeze immediately. To cook, place the skewers on a greased sheet pan and let them come to room temperature before proceeding with steps 6–10.
