Sheet-Pan Kebabs with Crispy Potatoes

Ingredients

Sheet-Pan Kebabs

  • 2 pounds (910 grams) ground beef

  • 1 onion, grated or very finely diced

  • 3/4 cup fresh parsley and/or cilantro, washed and chopped

  • 1 heaping teaspoon Haddar Kosher Salt

  • 1 teaspoon Pereg Cumin

  • 1 teaspoon coriander

  • 1 teaspoon Pereg Sumac

  • 1 teaspoon garlic powder

Crispy Potatoes

  • 6–8 small Yukon gold potatoes, cut into chunks

  • 2 tablespoons oil

  • 1 heaping teaspoon Haddar Kosher Salt

Directions

Prepare the Potatoes

Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.

To prepare the potatoes, place the potatoes, oil, salt, and paprika on the baking sheet; toss to coat evenly. Bake for 40 minutes.

Prepare the Sheet-Pan Kebabs

1.

Place all kebab ingredients in a bowl and mix to combine. Form the meat mixture into small, cylindrical kebab shapes.

2.

Remove the potatoes from oven and arrange the kebabs around them.

3.

Turn oven to broil. Broil for six to eight minutes per side, until cooked through.

Notes:

Plan ahead: This dish is best enjoyed immediately. You can rewarm, if needed, in a single layer, uncovered.
