Possibly my favorite childhood drink, second only to a Shirley Temple with a maraschino cherry on top, this drink is like taking a good cold sip of Hawaii in a glass. The blended strawberries,
cool pineapple, and coconut smoothie combine for that perfect tropical beachside flavor, and a dollop of freshly whipped cream (use canned if you must, but I really prefer fresh!), is chef’s kiss. If you can find one, slice up a fresh pineapple and garnish away!
Makes 2
1 and 1/2 cups (9 ounces) Mother’s Frozen Strawberries
1 cup milk
1 cup coconut cream
1 cup Gefen Pineapple Juice
1 medium banana
1/2 cup ice
freshly whipped cream, to serve
2 pineapple wedges, to serve
Blend frozen strawberries until smooth. Divide among two hurricane or Collins glasses.
Rinse the blender. Blend milk, coconut cream, pineapple juice, and banana with ice until smooth. Slowly pour the mixture over the strawberry layer and watch the red climb its way up the sides of the glass, creating a lava flow effect.
Garnish with freshly whipped cream and a pineapple wedge.
