Diets Small but bursting with lemon-lime flavor, these pretty dessert bars go a long way. With thanks to my gracious aunt who sent me the original version of these bars along with the tip that they freeze great! Yield: 36 bars
1 cup Glicks Flour
1 cup unsweetened flaked coconut
1/2 cup Gefen Confectioners’ Sugar
1/2 cup oil or unrefined coconut oil, such as Heaven & Earth
6 eggs
2 and 1/2 cups sugar
1/3 cup freshly squeezed lemon juice plus 1 teaspoon finely grated lemon zest
3/4 cup freshly squeezed lime juice plus 1 teaspoon finely grated lime zest
1/2 cup Glicks Flour
Preheat oven to 350 degrees Fahrenheit.
Mix all crust ingredients.
Press into 9×13-inch pan. Bake for 15 minutes.
Whisk all ingredients for lemon-lime layer until smooth. Pour over crust.
Bake for 40 minutes or until set.
Refrigerate until cool. Cut into bars using a sharp knife.
To garnish, sift confectioners’ sugar over bars before serving.
