Diets The creamy lemon dressing complements the lettuce and chicken in this unusual and delightful salad. It’s a terrific appetizer for a seudah or a light Chol Hamoed lunch.
8 ounces (225 grams) shredded lettuce
1/2 small red onion, sliced into half rounds
1/4 cup chopped walnuts, toasted
1 large orange, peeled and divided into segments
2 hard-boiled egg whites, diced (reserve the yolks for the dressing)
1 large or 2 small grilled chicken breasts, diced
2 hard-boiled egg yolks
2 tablespoons Gefen Lemon Juice
2 tablespoons water
2 tablespoons sugar
dash of Gefen Salt
2 tablespoons oil, such as Gefen Canola Oil
Combine all salad ingredients aside from chicken in a large mixing bowl.
In a smaller bowl, mash egg yolks and add remaining dressing ingredients. Mix well until thoroughly combined.
Divide salad among plates; top with a few chicken strips. Drizzle dressing over salad before serving.
