Looks elegant and tastes delicious. Of course, you can serve the fish without the skewers, too.
4-6 salmon fillets
1/2 cup flavored bread crumbs, such as Gefen Seasoned Bread Crumbs
1/2 cup Gefen Cornflake Crumbs
1 red pepper
1 green pepper
1 yellow pepper
1 red onion
15 fresh mushrooms
oil, to sprinkle
salt, to sprinkle
black pepper, to sprinkle
skewers
4 tablespoons mustard
4 tablespoons Manischewitz Honey
1/3 cup Gefen Olive Oil
2 tablespoons fresh lemon juice or Gefen Lemon Juice
Mix together mustard, honey, olive oil and lemon juice, reserving one-third to one-half for sauce.
Marinate fish in the remainder of the marinade in a Ziploc bag for a minimum of thirty minutes.
Preheat oven to 375 degrees Fahrenheit.
Combine crumbs in a shallow dish; coat fish. Bake for 20-25 minutes.
Slice peppers and onion. Place all vegetables on greased cookie sheet. Sprinkle with oil, salt, and pepper. toss to mix. Broil for 15 minutes.
Place fish over vegetables and drizzle both with reserved marinade.
Thread three or four pieces of fish on skewer. repeat for all servings.
Serve vegetables in center of dinner plates, then place skewers on side of each plate, partially resting on the vegetables. drizzle with sauce.
