Breakfast is always my most challenging meal on Passover… but this granola recipe has changed all that. It stays on the counter in a glass jar all Yom Tov long. Check with your rabbi which blessing to make on it.
3 round shemurah matzos
1/2 cup Gefen Honey
1/2 cup oil
1/2 cup slivered almonds
1/2 cup cashews
1/2 cup pecans
1/2 cup shredded coconut
1 and 1/2 teaspoons Gefen Cinnamon
1/2 cup raisins and/or Glicks Chocolate Chips
Preheat oven to 275 degrees Fahrenheit (135 degrees Celsius).
Place the matzo in a large bowl and crush into very small pieces.
Add the honey, oil, nuts, coconut, and cinnamon, and mix well. Spread onto a lined baking sheet and bake for 45 minutes, stirring once during baking time.
Remove from oven and let cool. Add raisins and/or chocolate chips. Enjoy!

Fantastic! Matzoh Granola is one of the the best things I’ve eaten. Just wait until you try it. Easy recipe, I doubled it for Passover so there was enough for a crowd. Also, I substituted walnuts for cashews (have you seen the cost of cashews these days?!). Try it, I promise you’ll love it.
