Diets What’s a barbecue without corn? While the proteins are “grilling” you’ll have just enough time to throw together this epic salad. Nothing like some fresh veggies to brighten up a meal.
8 ounces Haddar Baby Corn, sliced
1 pint cherry tomatoes, quartered
2 Kirby cucumbers, cut into half moons
10 ounces fresh parsley, chopped
2 tablespoons Gefen Olive Oil
2 tablespoons Gefen Lemon Juice
1 tablespoon sugar
1/2 teaspoon Pereg Garlic Powder
1/2 teaspoon salt
1/4 teaspoon Pereg Black Pepper
In a bowl, mix together baby corn, cherry tomatoes, cucumbers, and parsley.
To a container, add oil, lemon juice, sugar, garlic powder, salt, and pepper. Close securely and shake to blend.
Pour dressing over salad and toss to combine.
