Grilled Corn Salad

Ingredients

Grilled Corn Salad

  • 1 lemon, sliced in half and grilled

  • 3 to 5 red chili peppers, grilled

  • 1 ear of corn, such as Beleaves Frozen Corn, grilled

  • 1 avocado, sliced into large wedges

Directions

1.

Using a knife, remove corn from the cob, slicing it off from top to bottom.

2.

Layer all the rest of the ingredients on a bed of your favorite leafy greens.

3.

For dressing, squeeze half a lemon onto the salad (make sure to catch all the seeds!), drizzle with extra-virgin olive oil and season with salt and pepper. (Alternatively, use any dressing of choice.)

4.

Toss and enjoy!
