Diets If you need dinner on the table fast, this is an ideal solution for your side dish. The results are quick and buttery soft. Your kids will lick their plates clean, as my friend Malky attested.
4–5 potatoes, peeled and cubed
oil, such as Gefen Canola Oil
spices (optional)
4 russet potatoes, skin on
a couple pats of margarine
Place your cubed potatoes in a large microwave-safe food storage bag or microwave-safe container. Add oil, salt, and other spices of your choice (if using) and mix to coat the potatoes.
Microwave on high for 10–12 minutes. The potatoes will steam, thanks to the air around the potatoes.
Wash the potatoes thoroughly and poke some holes with a knife.
Place potatoes on a microwave-safe plate and microwave on high for 10 minutes.
Remove, slice in half lengthwise, and make a few diagonal cuts in each potato half.
Smear margarine on the hot potatoes and sprinkle with salt to taste.
