Microwaved Potatoes

Ingredients

For Cubed Potatoes

  • spices (optional)

To Mimic Whole Baked Potatoes

  • 4 russet potatoes, skin on

  • a couple pats of margarine

Directions

For Cubed Potatoes

1.

Place your cubed potatoes in a large microwave-safe food storage bag or microwave-safe container. Add oil, salt, and other spices of your choice (if using) and mix to coat the potatoes.

2.

Microwave on high for 10–12 minutes. The potatoes will steam, thanks to the air around the potatoes.

Notes:

You can add the oil, salt, and spices after microwaving the potatoes instead of before. The results will be the same.

Wedges: If you cut your potatoes into wedges instead of cubes you may need to increase the cook time by one to two minutes.

For Baked Potatoes

1.

Wash the potatoes thoroughly and poke some holes with a knife.

2.

Place potatoes on a microwave-safe plate and microwave on high for 10 minutes.

3.

Remove, slice in half lengthwise, and make a few diagonal cuts in each potato half.

4.

Smear margarine on the hot potatoes and sprinkle with salt to taste.

Not sure if it would be much less time, you can start with 8 min and see if it needs longer.
