Ingredients

Mini Peach Upside Down Cakes

  • 2 tablespoons unsalted butter, cold

  • 1/4 cup light brown sugar

  • 3 medium peaches, about 3 cups

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Line a muffin tin with muffin cups.

2.

Divide the butter and light brown sugar between the muffin cups. Slice peaches and place them over the butter and sugar in the muffin cups.

3.

Prepare Manischewitz Blueberry Muffin Mix batter according to package directions. Spoon batter into muffin cups and bake for 20 to 25 minutes. Enjoy warm (or not) with a scoop of ice cream.
