4 pita breads
1 ripe avocado
Lawry’s Garlic Salt (or simply salt and garlic powder), for sprinkling
juice of 1/2 lemon
1 tablespoon Tuscanini Olive Oil
1/2 finely diced English cucumber
1 finely diced red pepper
1/4 small red onion, finely diced
1/2 cup chopped fresh parsley
4 ounces fresh mozzarella, diced
juice of 1/2 lemon
1/2 teaspoon salt
1/4 cup Gefen Light Mayonnaise
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
2 cubes Gefen Frozen Basil or parsley
2 tablespoons lemon juice or vinegar (optional)
1 tablespoon water
1 teaspoon sugar
1 teaspoon salt
pinch coarse Gefen Black Pepper
Prepare the avocado salad: Combine all ingredients and mash until combined but still chunky.
Prepare the mozzarella salad: Combine all ingredients.
Prepare the dressing: Combine all ingredients.
To assemble, spread avocado inside pita sandwiches.
Stuff with mozzarella salad and drizzle with dressing.
