Ingredients

Mushroom Barley Soup

  • 3 T onion soup mix

  • 4 T flour dissolved in 1/2 c boiling water

  • 4 onions diced small

  • 7 c water

  • 2 boxes fresh mushrooms sliced

  • 1/2 c barley

  • 1/4 c oil

  • 1 T sugar

  • 3 t salt

  • 2 t parsley flakes

Directions

Prepare the Mushroom Barley Soup

1.

Sauté onions until golden. Add in mushrooms and sauté for 2-3 minutes.

Add sugar, salt, parsley, and soup mix. Slowly add the dissolved flour, mixing while you pour. Add remaining water and barley.

3.

Bring to rapid boil. Reduce flame and cook for approximately 45 minutes.
