Must-Make Coffee Cake with Streusel

This is the new go-to cake recipe in our home. We tried it three different ways; with full fat and sugar as the original recipe called for, with less fat and sugar, and with less fat and sugar plus whole wheat pastry flour. The last choice won hands down. I just told the family that I put in more coffee and therefore it was browner (that was true) and didn’t tell them about the whole wheat. This makes a chashuve, elegant mishloach manot that anybody would appreciate getting. But please, make it my way! Thanks, HDG.

Ingredients

Main ingredients

  • 1 tablespoon vanilla sugar

  • 1/2 teaspoon salt

  • 1 cup soy milk

  • 2 and 1/2 tablespoons coffee, dissolved in 2 tablespoons water

  • 1/2 cup Glicks Unsweetened Applesauce

Streusel

  • 1/2 cup sugar

Glaze

  • 1 tablespoon oil

Directions

Prepare the Cake

1.

Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

2.

Beat sugars and oil together.

3.

Add eggs, beating well after each addition.

4.

Add dry ingredients alternately with wet ingredients, and mix until well combined.

5.

Add applesauce at the very end and mix just until folded in.

6.

Pour into a greased tube pan.

Variation:

To make this cake even less fattening, use just 1/3 cup oil or even 1/4 cup oil and the rest applesauce to equal 1 cup.

Prepare the Cake

Yields 1 9×13-inch pan or 1 tube pan or 25–30 cupcakes

Prepare the Streusel

1.

Mix all the streusel ingredients together by hand in a small bowl.

2.

Sprinkle streusel onto the cake batter, and bake for 55 minutes or until toothpick inserted comes out clean and dry. For cupcakes, bake for only 20–30 minutes.

Notes:

You will have some streusel left over, which can be used either on another cake, or on your challot before baking, or frozen for later use.

Prepare the Glaze

1.

Mix all the ingredients together in a small bowl. Add more water or confectioners’ sugar as needed to achieve desired consistency.

2.

Drizzle over cooled cake.

Cake freezes beautifully.

Yes-

Sugar/ applesauce substitute Hi, I’m a bit confused based on reviews/ questions. Just to confirm.
Original recipe calls for 1 AND third cups sugar, and then half cup applesauce folded in at end.
“Healthy version” use 1/3 (or quarter) cup oil, then 1 cup of applesauce folded in at end aside from the half cup already written, so total 1 and half cups applesauce folded in at end?

Healthy version Hi, in the intro brynie talks about her option of making it with whole wheat flour. Is it the same recipe with only www flour? I would love the exact measurements of the most healthy version she made- the third option, so i can make it without trial and error:)

recipe options I made this recipe a number of times when it was posted on Kosher scoop. It had a “regular” recipe and more healthy option. Unfortunately, it looks like when it was posted here the 2 options were combined – meaning the recipe includes the liquid requirements for BOTH options. The applesauce is instead of part of the oil, not as well as.
Could you post the original?

Must – Make Coffee Cake with Streusel – Did I do something wrong Is there an error or did I do something wrong? I was enthusiastic to try a new cake for Shabbos, but was very disappointed when my cake came out like a rubber. (literally a rubber consistency). What could have gone wrong?

Malky, I feel your frustration and I apologize for the amount of time it took to get back to you. But we wanted to get to the bottom of this. We went back to the original file and found that one cup of sugar (it said 1/3 cup sugar, when it should have said 1 and 1/3 cup of sugar) was omitted. Additionally, please note that one must gently fold the applesauce in, as it already states in the recipe.

While we can’t replace the time and effort lost on making this cake, rest assured your feedback will prevent those attempting the recipe from much aggravation. Thanks for using Kosher.com.

Didn’t come out 🙁 I’m an avid baker and I tried this recipe and it did not come out. It fell and was one big flop. Not a happy camper! 🙁

Dinie, I am so sorry for your experience. Can you tell me what happened exactly? Maybe we can troubleshoot?
