Diets This cake took a few tries to get it just the way I wanted it. So we ate it on Shabbos Chanukah and the Shabbos after… It’s a good thing I had company who were on a gluten-free diet and appreciated it! I think you’ll agree that the taste and texture are amazing, and it tastes chometzdig. That’s what all my tasters said.
1 and 3/4 cups almond flour
1/4 cup potato starch
1 tablespoon Heaven & Earth Coconut Flour
1 tablespoon cocoa
1 and 1/2 teaspoons cinnamon
1 and 1/2 teaspoons baking soda
1 teaspoon Elite Instant Coffee
1/2 teaspoon salt
4 eggs, at room temperature
3/4 cup light brown sugar or Heaven & Earth Coconut Sugar
2 teaspoons vanilla sugar
1/2 cup Tonnelli Avocado Oil
6 tablespoons freshly squeezed orange juice
crushed candied nuts, for garnish (optional)
1/4–1/3 cup almond flour
1/4 cup light brown sugar
2 tablespoons potato starch
1 full teaspooon cinnamon
1 teaspoon oil
3/4 cup confectioners’ sugar
2 teaspoons Elite Instant Coffee, dissolved in 1–2 tablespoons water
1 teaspoon oil

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a tube pan well with cooking spray. Set aside.
Whisk the almond flour, potato starch, coconut flour, cocoa, cinnamon, baking soda, coffee, and salt in a large bowl until well combined.
Beat eggs and sugars in the bowl of an electric mixer for five minutes, until very light and thick. Add oil and mix until incorporated. With the mixer on low speed, add dry mixture alternately with the orange juice and mix just until combined. Do not overmix.
Pour half the batter into the prepared pan.
Mix all ingredients in a small bowl. Sprinkle half the crumbs evenly over the batter in the pan. Pour the rest of the batter on top. Sprinkle remaining crumbs on top.
Bake for 45 minutes, or until done. Allow to cool completely in the pan.
Combine all ingredients until smooth and thick. Adjust quantities if necessary. Drizzle glaze over cooled cake. Top with candied nuts around the outer rim of the cake, if desired.

Can I use ground coconut instead of coconut flour? And can I use regular sugar instead of light brown?
