No Bake Checkerboard Bars

This is a perfect parve dessert for a Shabbat meal! Really easy to make, when you slice into it, you can see the beautiful layers! Kids will especially love this dessert and can even help make it. This is a real winner!

Ingredients

Cookies

  • 2 packages (12 ounces each) zebra cookies

Syrup

Cream

  • 3 yolks (pasteurized)

  • 1/4 pound margarine

  • 1 and 1/2 teaspoons Gefen Vanilla Sugar

  • 2/3 cup sugar

  • 1/3 cup water

  • 1 and 1/2 tablespoons Gefen Cocoa

  • 1 and 1/2 tablespoons coffee

  • 4 ounces baking chocolate

Directions

Prepare the No Bake Checkerboard Bars

Combine all ingredients for syrup, stirring until smooth.

Cream yolks, margarine, and vanilla until fluffy. Over medium heat, dissolveĀ  the rest of ingredients, stirring until liquefied. Pour into mixer, beating until smooth.

Dip each cookie in syrup until coated (do not allow to become soggy). Place five dipped cookies onto prepared cookie sheet. Spread a thin layer of cream over each cookie. Dip five more cookies. Stack a second layer, alternating colors by putting the light strip of cookie over dark side of cookie underneath. Repeat to obtain five layers, spreading cream very sparingly between each layer.

4.

Repeat with remaining cookies to obtain four bars. Spread cream on the top and sides of the bars. Freeze for one hour or longer before cutting. Cut to 1/4-inch slices.

5.

Line a cookie sheet with parchment paper.

A hand mixer would be enough, but it is needed to whip the cream ingredients.

Yes, I would recommend using a mixer for this recipe.
