Diets It’s almost Purim! If you’re like me, making hamantaschen for Purim is a must, but sometimes life also gets busy. You might not have the time it takes to make, prep, and bake your delicious triangle cookies.
If you feel that way, or just want a quick recipe to help you get in the Purim spirit, try these no-bake Hamantaschen!
3/4 cup Gefen Almond Flour
1/4 cup oat flour (see note)
1/4 cup protein powder (see note)
3 tablespoons Gefen Maple Syrup
1 tablespoon peanut butter
2 tablespoons Heaven & Earth Coconut Oil
1 teaspoon lemon juice
pinch of salt
Mix ingredients together and scoop out into balls. Flatten them slightly.
Form those balls into triangles and press your thumb in the middle to form an indentation. Place whatever you would like inside the indentation. I use different jellies.
Place your hamantaschen in the refrigerator for about 10 minutes so your dough can set, and enjoy!
