Take your hamantaschen game up a notch with these brownie hamantaschen that are made with simple and healthier ingredients too! Yields 5 to 6 hamantaschen
1 and 1/2 to 2 cups oat flour
2 tablespoons cocoa powder
1 egg
1/4 cup coconut oil
1/3 cup syrup/honey
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
1/8 teaspoon salt
chocolate chips/chunks as desired
Preheat oven to 350 degrees Fahrenheit.
Mix all the ingredients. If the dough is a little loose/sticky and you want it to firm up a bit, you can stick it in the fridge for a few minutes to chill. (I didn’t need to.)
Sprinkle some flour onto a surface and flatten out the dough.
Cut the dough into circles (I used the top of a cup).
Fold in the dough to look like a hamantasch and place chocolate chips/chunks in the center.
Bake at 350 degrees Fahrenheit for 10 minutes (watch so they don’t overbake!).
