This makes a great addition to the dip course on Shabbos day and gets finished every time with people scraping their challah on the last bits in the bowl.
4 avocados, cubed
4 Israeli cucumbers, chopped
1/2 pint of cherry tomatoes, cut into halves or fourths
1/3 of a large mango, cubed
juice of 1 lime
juice of 1 lemon
1 TBSP of avocado oil
1 and 1/2 tsp of garlic powder
1 and 1/2 tsp salt
1/8 tsp pepper
1 tsp dried basil
fresh parsley for garnish (optional)
Combine all ingredients, gently toss to mix using gloves, and enjoy!
