Diets If you love nuts, and you love cookies, these nut cookies are a must! These cookies come out slightly crunchy on the outside, but soft in the middle. The lemon rind adds a nice zesty flavor. Be sure to leave room in between each cookie as they do spread out.
1 cup butter or pareve margarine
4 eggs
1 cup sugar
1 cup Manischewitz Cake Meal
1 and 1/2 cups chopped nuts
1/2 teaspoon salt
2 teaspoons grated lemon rind
Cream butter or margarine until soft.
Beat in eggs and sugar until light and fluffy.
Stir in cake meal, nuts, salt and lemon rind.
Drop by teaspoonful onto well-greased cookie sheets, at least two inches apart, to allow for spreading.
Bake in a moderate oven (375 degrees Fahrenheit) for 10 minutes or until browned at edges.
