The nutty flavor is the perfect addition to this already delicious muffin.
Yield: 14 small muffins
3/4 cup peanuts
1/2 cup oil
2 eggs
3/4 cup sugar
1 teaspoon Gefen Vanilla Extract
2 teaspoons Gefen Vanilla Pudding mix
1/2 cup orange juice
2 teaspoons baking powder
2 cups Glicks Flour
1 and 1/2 tablespoons sugar
1/4 teaspoon Gefen Cocoa
Preheat oven to 350 degrees Fahrenheit. Line 14 mini muffin holders.
Place peanuts into a food processor fitted with the S-blade and process until small chips form. Add oil, eggs, sugar, vanilla, pudding mix, orange juice, baking powder, and flour to food processor – in that order – and process until well combined.
Pour into muffin holders.
Combine topping ingredients and sprinkle evenly over muffins.
Bake for 20 minutes.
