Kosher for Passover, and so easy you’ll make it year-round.
1 tablespoon Tuscanini Olive Oil
2 garlic cloves, minced (about 1 tablespoon)
1 small shallot, minced (about 2 tablespoons)
1 cup uncooked quinoa
1/4 cup chopped tomatoes
1 cup vegetable broth
3/4 cup water or more broth
1/4 cup Tuscanini Tomato Juice
salt, to taste
pepper, to taste
Preheat oven to 375 degrees Fahrenheit.
Combine all ingredients in a 9×13-inch pan. Mix to combine. Cover tightly with aluminum foil.
Bake for 40 minutes or until all liquid is absorbed.
