Orange, Leek, and Date Chicken

Ingredients

  • 6–8 chicken thighs

  • 2 large leeks, sliced and checked

  • 8–10 Beleaves Dates, pitted and checked

  • 3 oranges, peeled and sliced in 1- to 1-and-1/2-inch slices

  • zest of 3 oranges

  • juice of 2 oranges (about 1/2–2/3 cup)

  • 4 cloves of garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/2 cup water or chicken broth

  • drizzle of olive oil

  • 2 tablespoons honey or Beleaves Date Syrup

  • fresh basil (optional)

Directions

Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Drizzle some olive oil into the bottom of a 9×13-inch baking dish, then layer in the sliced oranges, dates, and leeks. Place the chicken thighs on top.

Add the garlic, orange zest, cumin, black pepper, paprika, and salt, then drizzle over the honey or date syrup. Finish with another drizzle of olive oil, then pour in the fresh orange juice and water or chicken broth.

Cover with wet parchment paper and bake for 45 minutes. Remove the parchment paper, baste the chicken with the sauce, and return to the oven uncovered for another 15–30 minutes, until the chicken is tender, golden, and beautifully caramelized.

Once cooked, chop or tear some fresh basil over the top if desired, and enjoy!

Tips:

For a serious flavor enhancer, let the chicken marinate overnight and bake in the morning.
