Parmesan Kale Salad

Ingredients

Salad

Dressing

  • 1 clove garlic, crushed

Optional add-ins

  • pomegranate seeds

  • roasted mushrooms

  • croutons

  • sliced cucumber

  • chopped nuts

Directions

1.

Chop the kale into bite-size pieces, set aside.

2.

In a small bowl, mix the dressing ingredients together. Set aside.

3.

Using a peeler, carefully “shave” the cheese to get thin slices.

4.

Assemble the salad, place the kale in a bowl add the cheese drizzle dressing over it.

5.

The components can all be made in advance and kept separately until ready to serve.

Notes:

I like to keep the salad simple and clean. But feel free to add any of the suggested add-ins listed above.
