Pesach Lemon Crinkle Cookies

Ingredients

Kosher for Pesach Lemon Crinkle Cookies

  • zest of 1 lemon plus juice of 1/2 a lemon

  • 2 eggs

Directions

1.

Preheat your oven to 350 degrees Fahrenheit.

2.

Add all of the ingredients to a large bowl and mix until it all comes together.

3.

Scoop portions of cookie dough onto a baking sheet lined with Gefen Parchment Paper. Flatten slightly and sprinkle confectioners’ sugar liberally over the tops and sides of each mound.

4.

Bake 12 to 14 minutes until slightly golden and thoroughly crackled. Cool and enjoy!

Would this work without lemon zest? Would I add any extra lemon juice?

Don’t add extra lemon juice, but the lemon flavor will be less pronounced.
