Diets I’ve been making these out of sheer desperation, without a recipe, since my oldest son was two and had an eating strike on Pesach. These were my savior then and are still the ultimate picky eater’s favorite Pesach food. They can be mixed with one hand, with a baby on the opposite hip — a real winner in my book. For a year-round variation, try this simple pancake recipe by Draizy Wercberger.
1 cup milk
1 egg
1/4 cup Gefen Potato Starch
1 and 1/4 cups Gefen Almond Flour
2 tablespoons sugar
1 teaspoon baking powder
1 tablespoon neutral-flavored oil
pinch salt
1/2 cup Glicks Chocolate Chips
Combine all ingredients in a bowl. Heat a large frying pan over medium heat and spray with cooking spray.
Drop batter into frying pan with 1/8th cup and allow to cook until lightly browned on one side, about two minutes.
Flip the pancakes and cook an additional minute and a half, until evenly browned. Serve immediately.
Yields 16 small pancakes
