Diets One versatile dough, two exotic mains.
This easy-to-handle recipe yields enough for both main dishes — two pizzas and a focaccia —perfect for a small teen crowd. Made with half apple juice for a subtle hint of flavor, it also helps when you want to
taste just a sliver and don’t have to wash for that.
Yield: 3 pizza pies
6 cups flour such as Tuscanini
1 cup apple juice
1 cup water
2 and 1/2 tablespoons dry yeast
4 tablespoons sugar
4 tablespoons Tuscanini Olive Oil
1 teaspoon salt
1 egg
Dissolve yeast in water with half of the sugar, and set aside for three to five minutes to bloom as you assemble the rest of the dough.
Combine the rest of the dough ingredients in the bowl of an electric mixer fitted with the dough hook. Alternatively, prepare the dough in a medium bowl, and knead it by hand. The dough is small enough to make it easy to knead by hand.
Knead the dough on medium-high speed for five minutes until it becomes strong and elastic.
Cover and place in a warm area to rise for one hour until doubled in size
Divide the risen dough into three sections.
