1 to 2 pounds chicken, cut into thick strip
1/2 large onion, sliced
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/3 cup pomegranate syrup (pomegranate concentrate)
1/3 cup honey
1/2 lemon, juiced
2 tablespoons cornstarch
1 tablespoon water
Preheat oven to 400 degrees Fahrenheit.
In a small saucepan over medium heat, add the cornstarch and water. Mix quickly till it becomes a slurry.
Then add the honey and pomegranate syrup to the pan. Whisk until the mixture is bubbling and thick, then add the lemon. Whisk one more time and remove from heat to cool.
While it’s cooling, cut the chicken into thick pieces the same size as grilled chicken. Put that in a pan with the onion, olive oil, salt, garlic powder, and pepper. Mix all until combined. Put in the oven for 20 minutes.
After 20 minutes, remove chicken, pour the sauce on top, mix a little to make the sauce go everywhere. Put back in the oven for 10 minutes until the chicken is soft and the sauce is coated and browned.
