These bite-sized muffins are not only cute but also delicious.
Yield: 20–24 mini muffins
1/2 cup margarine, softened
2 eggs
2 tablespoons Heaven & Earth Lemon Juice
1/4 cup Gefen Almond Milk
3 tablespoons sugar
1 and 1/3 cups Glicks Flour
1/4 plus 1/8 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon poppy seeds
Preheat oven to 350 degrees Fahrenheit.
Cream margarine, eggs, lemon juice, milk, and sugar. Add remaining ingredients slowly and mix well (do not over-mix). Spoon into mini muffin tins and bake for 12–15 minutes until the tops are firm.
Optional: Mix confectioners’ sugar with lemon juice and water for the perfect glaze.
