These dense muffins are filling and nutritious. I like to make them more fun and turn them into muffin lollipops. Kids just love anything that comes on a stick. I convince my picky toddler to eat chicken if I hold the fork upwards and tell him its lollipop chicken. He’s usually convinced. Whatever works!
2 cups 100% whole wheat flour such as Shibolim Extra Fine Whole Wheat Flour
2 cups oats
1/2 cup granulated brown sugar
2 eggs
2/3 cup oil
1 cup Haddar Applesauce
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 cup Glicks Chocolate or white chocolate chips
1 to 2 ounces baking chocolate
Preheat oven to 350 degrees Fahrenheit. Grease a mini muffin pan.
In a large bowl, combine all ingredients. The mixture will be thick, like cookie dough. Roll into balls and place in prepared muffin pan. Bake for 15 to 20 minutes.
To assemble pops, melt chocolate. As soon as the mini muffins come out of the oven, dip lollipop sticks into melted chocolate and stick into balls. Let cool.
Yields 24 mini muffin pops
