  • 1 tablespoon mushroom-scallion mixture

Mushroom-Scallion Mixture

  • 12 ounces (340 grams) portobello mushrooms, diced

  • scallions, chopped

  • oil, for sautéing

  • 2 tablespoons Bartenura Balsamic Vinegar

Directions

Prepare the Panini

1.

Sauté mushrooms and scallions in oil.

2.

Add the rest of the ingredients and let simmer for five minutes.

3.

Slice open the mini baguette. Spread one tablespoon of the mushroom mixture inside.

4.

Arrange tomato and cheese on top. Place in a panini machine to toast.
