1 small onion
3 potatoes
2 eggs, beaten
1/4 cup oil, such as Gefen Cottonseed Oil
1 tablespoon Gefen Salt
1 teaspoon freshly ground Gefen Black Pepper
caramelized onions
pulled beef or chicken
sauteed crispy pastrami strips
garlic mayonnaise
Preheat oven to 400 degrees Fahrenheit. Line a quarter-sheet pan with foil or Gefen Parchment Paper.
Using the “S” blade of your food processor, purée onion. You can also grate the onion by hand, if you prefer. Switch blades and shred potatoes. Add beaten eggs and oil to the mixture in the food processor. Season with salt and pepper.
Pour the batter into prepared pan. Bake one hour and 30 minutes or until golden and crispy.
Cool five minutes and cut in squares.
Top with caramelized onions, shredded beef or chicken, or sauteed pastrami strips. Drizzle with garlic mayonnaise. Serve warm.
Kugel flats can be frozen with no topping. Defrost and bring to room temperature. Brush with a bit of olive oil and reheat 10 minutes in a 400-degree-Fahrenheit oven.
