A hearty and healthy Shabbos side-dish.
1 cup quinoa
1 cup brown/wild rice
1 green pepper
1 red pepper
1 yellow pepper
1 zucchini
1 carrot
1 cup Gefen Sweetened Dried Cranberries or raisins
3 cups Manischewitz Chicken Broth or other chicken stock OR 2 tablepoons chicken soup bouillon with 3 cups water
2 cloves minced garlic or 2 cubes Gefen Frozen Garlic
salt, to taste
Finely dice all vegetables.
Combine all ingredients… I place them under my Shabbos chicken and let them cook together to allow the juices from the chicken to enhance the medley.
Cover tightly to ensure moisture is locked in.
When complete, mix and serve.
