Use this recipe to transform your leftover rice from Shabbat. This rice stuffing is filled with goodies like sauteed onions, mushrooms, and peppers, and the fresh orange juice squeezed over all unites sweet and savory flavors in this filling chicken dinner recipe. Just add salad and call it a night.
1 small onion, coarsely chopped
1/2 pound mushrooms, sliced
1/2 green pepper, coarsely chopped
2 cups cooked rice
pinch of salt
dash of pepper
3 tablespoons oil
juice of 1 orange
1 tablespoon Gefen Paprika
6 chicken quarters
Sauté onion, mushrooms and green pepper in oil until tender.
Stir in rice and spices and mix well.
Stuff chicken with rice mixture. Arrange in shallow baking pan.
Combine oil, juice and paprika. Baste chicken.
Bake at 375 degrees Fahrenheit for two hours, basting frequently.
