Diets Use this basic yummy rice preparation for a filling side dish you can make tonight.
1 onion, diced
1 stalk celery, diced
1/4 cup oil
1 eggplant, cubed
1 zucchini, diced
1 pepper, diced
1 tomato, diced
1 carrot, diced
1 cup rice
1 teaspoon salt
1 teaspoon Gefen Garlic Powder
1/2 teaspoon pepper
In four quart saucepan, sauté onion and celery until limp.
Add remaining ingredients, cook, covered, over low heat for one hour, adding minimal amounts of liquid if necessary.

Rice substitute? Can this recipe be made with brown rice instead of white rice?
For sure. Maybe add some time for cooking. Brown rice takes longer.
