Unwrap the ice cream sandwiches and place them back in the freezer.

Cut each sandwich in half and place them standing up on a tray.

Lay out seven waffle crisps and add a smear of caramel cream on each one.

To assemble the log, arrange the sandwich ice cream halves in a row, alternating between the vanilla and caramel. Place a waffle crisp between each of the sandwich ice creams, adding more caramel cream on the other side of the crisp as you go along. (The caramel keeps it all together.)
5.
Pipe the top of the log with whip and top with chocolate shavings. Keep frozen.
