This recipe came about because I had some Diet 7-Up in the fridge that wasn’t quite as fizzy as I like it. I thought, Why not use it on chicken? I really like the combo of flavors here. The seasoning is subtle but tasty. Serve over rice, bulgur, quinoa, or mashed sweet potatoes.

Ingredients

Main ingredients

  • 1 tablespoon Bartenura Olive Oil

  • 1 onion, sliced in half-rounds

  • 6 chicken thighs

  • 2–3 tablespoons natural, sugar-free plum jam (or sub with another flavor of your choice)

  • 1 – 1 and 1/2 cups Diet 7-Up

  • Montreal Chicken Seasoning, to taste

  • Haddar Kosher Salt, to taste

  • a generous handful fresh chopped parsley

Directions

Prepare the Chicken

1.

Pour olive oil into a six-quart slow cooker. Add onion and mix together well, layering evenly on the bottom of the pot.

Place chicken thighs in a single layer on top. Smear the jam on the chicken, under the skin.

3.

Pour Diet 7-Up around the chicken. Sprinkle chicken pieces lightly with Montreal Chicken Seasoning and salt. Add parsley all around.

4.

Cook on high for one hour and low for four hours, or on low for five to six hours. Baste two to three times in the middle.

Notes:

This chicken has a lot of sauce. You can freeze leftovers and use to marinate chicken cutlets.

Saucy Crockpot Chicken If I generally don’t bring in diet 7 up, regular 7 up, or for that matter any lemon sodas (diet or non diet) into the house, can I substitute this for anything else?

Saucy Chicken I would love to make this but I don’t have a crock pot. Any way of doing it in a regular pot?
