This dip has the flavor of cream cheese, without the calories! It also takes no time to put together. Perfect with just about anything — pita chips, French fries, cut-up veggies, crackers. Feel free to experiment and let me know what you served it with!
1/2 teaspoon fresh lemon juice, or to taste
1 8-ounce (225 gram) container cottage cheese, 3% or 5%
small handful of fresh parsley leaves
small handfull fresh dill (optional)
3-4 mint leaves (optional)
salt, to taste
black pepper, to taste
Place lemon juice in the bottom of the blender cup. Add cottage cheese and blend until mixture is smooth and silky. Empty into a medium-sized bowl.
Process garlic, parsley leaves, and other herbs, if using, in the food processor with the knife attachment, until very finely chopped. Add to cheese. Season with salt and pepper to taste.
Mix all together until well blended.
Refrigerate until ready to use.

Not so good! I was going to serve it with vegetables for dipping but it tasted awful. The instructions mention garlic but it wasn’t listed as an ingredient so I did use a little garlic, that might have made a difference but I don’t think so. It tasted just like the ingredients, like cottage cheese with seasoning, and nothing like cream cheese. Cream cheese is sweet and this was just bland, all I could taste was the cottage cheese which has little flavor to it. I added more parsley and dill but it still tasted awful to me. I ended up added some sour cream with an envelope of Ranch Dip seasoning which gave it some flavor, at least I can serve it that way and not throw it all away.
