Diets Load up a bunch of tortillas with all your favorite flavors and slide them in the oven—no need to cook these quesadillas one at a time on the stove! Make a quick batch of pico de gallo for the perfect accompaniment, and you’re done.
flour tortillas
shredded mozzarella cheese
red onions, sliced thinly
Gefen Black Olives, sliced
tomatoes, sliced
mushrooms, sliced
fresh spinach leaves
1 tomato, finely diced
1/4 red onion, finely diced
2 tablespoons minced cilantro or 6 cubes Gefen Frozen Cilantro
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
1 teaspoon minced jalapeños
juice of 1/2 lime (about 1 teaspoon juice, such as Tuscanini)
1 teaspoon oil
salt, to taste
black pepper, to taste
sour cream
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Place tortillas on the baking sheet. Top with cheese and other toppings of your choice. Fold in half, pressing down to help them stay closed.
Bake for 10–15 minutes, until the cheese is melted and the tortillas are golden.
In a bowl, mix together the tomatoes, onions, cilantro, garlic, jalapeños, lime juice, oil, salt, and pepper.
Serve quesadillas with pico de gallo, sour cream, and marinara sauce.
