Directions

  1. Preheat your oven to 400 degrees Fahrenheit. In a large frying pan, heat the parve “meat” with spices. Add water and simmer, while stirring, until fragrant and uniform. Remove from heat.

  2. Spray a baking sheet with oil and arrange tortillas around the perimeter, with half of each tortilla hanging over the edge of the pan. Add one tortilla to the center to seal the bottom. Sprinkle cheese over the tortillas.

  3. Top with seasoned parve “meat” followed by the tomatoes, corn and black beans, making sure each addition is evenly distributed. Sprinkle more cheese on top and add the final tortilla to the center.

  4. Fold the edges of the tortillas over to enclose the filling and spray with oil. Top with another sheet pan and bake for 20-25 minutes, until golden and melted.

  5. Slice and serve with your favorite toppings.

I would add a few tbsp of water
