Today, Tova’s making Sheet Pan Italian Chicken and Potatoes, with one bowl, one sheet pan, and basically no reason to dread cleanup.

1 pound baby potatoes, quartered
1/2 pound baby peppers, sliced into thick rings
1 red onion, sliced
4 tablespoons oil, divided
2 packets Haddar Italian Dressing and Seasoning Mix, divided
2 teaspoons paprika, divided
2 and 1/2 pounds chicken breast, cubed
1 tablespoon Dijon mustard
1/2 cup Gefen Panko Crumbs
Preheat your oven to 450 degrees Fahrenheit.
In a bowl, toss the potatoes, peppers, and onions with three tablespoons oil, one packet Haddar Italian seasoning and one teaspoon paprika. Mix until well coated, then pour onto a parchment-lined baking sheet. Bake uncovered for 30 minutes.
When the potatoes are nearly done, combine the chicken with Dijon and the remaining one teaspoon paprika, one packet of Italian seasoning, and one tablespoon oil. Toss to coat. Add the panko crumbs and mix until evenly distributed.
Remove the sheet pan from the oven and nestle the chicken pieces into the potatoes, peppers and onions. Spray with oil and return to the oven to bake for 20 more minutes.
