Spinach and Potato Croquettes

These potato and spinach croquettes are a great alternative to salmon or tuna patties. The potatoes and spinach are blended for a smooth texture and they can be fried or baked according to your preference. Enjoy!

Ingredients

Main ingredients

  • 4 potatoes, cooked and mashed

  • 1/2 pound spinach, cooked, drained and minced

  • 1 and 1/2 tablespoons oil

  • 2 egg yolks, slightly beaten, plus 1 whole egg, slightly beaten, for dredging

Directions

Prepare the Croquettes

1.

Combine potatoes, spinach, oil, egg yolks, and seasonings. Blend until smooth.

2.

Shape into croquettes. Dip into egg and roll in crumbs.

3.

Fry in oil until brown.

Notes:

Frozen spinach can be used without cooking. Broccoli, zucchini, or cauliflower can be substituted for spinach.
