Spinach and Potato Croquettes

Ingredients

Main ingredients

  • 4 potatoes, cooked and mashed

  • 1/2 pound spinach, cooked, drained and minced

  • 1 and 1/2 tablespoons oil

  • 2 egg yolks, slightly beaten, plus 1 whole egg, slightly beaten, for dredging

Directions

Prepare the Croquettes

Combine potatoes, spinach, oil, egg yolks, and seasonings. Blend until smooth.

Shape into croquettes. Dip into egg and roll in crumbs.

Fry in oil until brown.

Notes:

Frozen spinach can be used without cooking. Broccoli, zucchini, or cauliflower can be substituted for spinach.

Variation:

To bake, grease baking pan with four tablespoons of oil. Place croquettes onto pan. Bake at 400 degrees Fahrenheit for 15 minutes on each side.
