Diets These potato and spinach croquettes are a great alternative to salmon or tuna patties. The potatoes and spinach are blended for a smooth texture and they can be fried or baked according to your preference. Enjoy!
4 potatoes, cooked and mashed
1/2 pound spinach, cooked, drained and minced
1 and 1/2 tablespoons oil
2 egg yolks, slightly beaten, plus 1 whole egg, slightly beaten, for dredging
1 teaspoon salt
1/2 teaspoon pepper
2 cups Gefen Bread Crumbs
Combine potatoes, spinach, oil, egg yolks, and seasonings. Blend until smooth.
Shape into croquettes. Dip into egg and roll in crumbs.
Fry in oil until brown.
